White to light yellow-brown crystalline powder or milky white needle crystal. Odorless, and slightly bitter, the aqueous solution is tasteless. Propyl gallate is hygroscopic and its decomposition can be promoted by light. Insoluble in water, soluble in hot water, ethanol, ether, propylene glycol, glycerin, cottonseed oil, peanut oil, and lard. Melting point 146 ~ 150 ℃, more sensitive to heat, and decomposition at the melting point, so its application in food is less stable, not high temperature, and should not be used in baking.
Propyl gallate is white to light yellow-brown crystal powder, or milky white needle crystal, odorless, slightly bitter taste, the aqueous solution is tasteless. It can be obtained from water or aqueous ethanol as a salt with one molecule of water of crystallization, and it becomes anhydrous at 105℃ with the loss of water of crystallization. Melting point 146~150℃, it is easily soluble in organic solvents such as ethanol and slightly soluble in grease and water. The pH of PG0.25% aqueous solution is about 5.5. PG is relatively stable to heat, good antioxidant effect, is easy to react with copper and iron ions to present color, change to purple or dark green, hygroscopic, unstable to light, and easy to decompose. PG has a strong antioxidant ability to grease, with synergist citric acid. The antioxidant effect of PG on lard is stronger than BHA and BHT, but its toxicity is relatively high.
China's "Hygienic Standard for the Use of Food Additives" (GB2760-2011) stipulates that propyl gallate can be used in fats, fried foods, dried fish products, cookies, quick-cooked noodles, quick-cooked rice, and canned food at a maximum use level of 0.1g/kg (in terms of total fat). When used in combination with other antioxidants, PG shall not exceed 0.05g/kg (in terms of total fat).
Propyl gallate can be colored when used at 0.01%, so it is generally not used alone, but in combination with BHA, BHT, or citric acid, is ascorbic acid and other synergists. The total amount of BHA and BHT does not exceed 0.1g/kg, and PG does not exceed 0.05g/kg. PG dosage is about 0.05g/kg which can achieve a good antioxidant effect.
When propyl gallate is used, a small part of the grease should be taken first, and PG should be added to make it fully dissolved by heating, and then mixed with all the grease. Generally, it is added immediately after the refining of grease or m(PG): m(citric acid): m(95% ethanol) in the ratio of 1:0.5:3, then slowly added to the grease and stirred well.
In addition, since propyl gallate has the property of reacting with copper, iron, and other metal ions to change color, avoid using copper, iron, and other metal containers when using it. Citric acid and tartaric acid, which have chelation, can be used in combination with PG, which not only plays a synergistic role but also can prevent the coloring effect of metal ions.
